Nata de coco is a fermented product by Acetobacter xylium. The formation of nata requires source Carbon (C) and Nitrogen (N). nitrogen used in the production such as Urea or Ammonium Sulfate (ZA) causes some people to feel reluctant consume coco. One natural protein sources that have high content Moringa Leaf (Moringa oleifera). research aims determine appropriate concentration leaf extract obtain with good physical properties favored consumers. method was completely randomized design consisting four replications two treatments. treatment consisted Amonium Zulfat (ZA), which were concentrated follows 2.5%, 5%, 7.5 % 10%. Analysis carried out on yield, thickness, crude fiber, organoleptic tests for best (color, aroma, taste texture) from 20 semi-trained panelists. results showed 10% leaves yield 85.11%, thickness 0.66 cm fiber 17.26% test score 3-4 (neutral-like)
